We have run into the issue of a couple of our required fields not showing in the email submission we receive. This isn't happening constantly so we are wondering if it's only when they enter the amount of "0". If that may be the case, is there a way to make that still show in the email we receive?

You can try deleting the email notification and adding a new one. It should automatically insert every field into the email:
