love the jot form service. Please have a look at my form Premier Hot Tub Hire
issue I have is when I get the email through with the form detail on from the customer, if I hit reply in my email client on the phone to reply to the customer, the email address in the reply to is a jot form email address NOT the customers email address from the form.
how do I set the form up to insert the customers email address in the reply to field please.?

I have checked your form named "Premier Hot Tub Hire".
As far as I understand your issue, you want to reply the notification email that includes the users' submissions and you prefer that the users' emails will be fulfilled in the recipient address automatically. Unfortunately, this is not possible. The sender email address of the notification emails is default JotForm's sender address firstname.lastname@example.org. If you want to forward them, you need to enter the user's email address manually to the email recipient field.
On the other hand, If you want to send automatic emails to your users, you can set autoresponder email to the form as you can see in the following guide: https://www.jotform.com/help/26-Setting-Up-an-Autoresponder-Email
