My desire is to to pass a field value from a previous form page to a PayPal payment widget subscription NAME field. Can I do this?

If I understand correctly, what you were after is similar to the custom payment form described on our user guide: Setting up a Custom Recurring Donation Form
You will need to enable the Variable Price option before you can assign a calculation value to a payment field (Get Price From)

What I want to do is apply a text value as defined earlier on my form (a result from a drop down box) not a number value to your Payment Systems, Name field shown above. I have 3 homes of children (home 1, home 2, home 3) which we offer sponsorships. I currently do this with 3 forms, 1 for each home. My desire is to use 1 form and once the user selects a Home Name early on the form, I can apply it to this subscription field. Example: Babies Home Sponsorship - $30.

Thank you for explaining further and providing more details.
Unfortunately what you wanted to do is not possible for the Payment field. You cannot dynamically alter the Subscriptions/Items Name in the payment field using calculation or conditions.
When using the payment field (PayPal), you can only create the subscriptions/items with fixed names when adding them in payment settings.
