I created a product order form for our volunteers to pay their fees. First, is that type of form the best option? Also, when I go to add payment, paypal is my only option to edit. I need square or authorize.net as payment method. I went to square through plugins to add square to form, but it added it to a new form. What do I need to do?

On the first question it will absolutely depend on if the fees paid by volunteers are donations or payment for a product.
You can setup you Square payment for your form by using the Payment Menu in your form as illustrated below. Kindly note that since you have Paypal you will need to remove it and add Square Payment Integration.
