How to view original and edited submission data?

Is there a way of doing this so that in the submission data that the original submission is shown and also the edited submission is shown as two different submissions rather than the edited submission just overriding the original submission?

Unfortunately no. It is currently not possible to show original and the edited submission data both together. Form's submission data will always display the latest edit.
