Basically, having more than one payment method in a form is not possible. However, a workaround would be cloning your form in order to have a new version which you can integrate with another payment gateway, then you can create a third empty form(except for the Iframes widgets, and the field that asks the preferred payment method) where you will display one form, or the other, depending on the payment method selected.
Please check this complete guide that shows the step by step implementation of this workaround: https://www.jotform.com/help/182-How-to-Create-a-Basic-Multiple-Payment-Form

This is a little over my head. Could I create two forms - one for Paypal and one for Stripe and then have two seperate buttons on my landing page?

Yes, katstar2, you can create two forms and place both forms on your landing page. But this would mean that you will have to have the same products on two different forms.
Warm regards.
