Hi,
Wondering if this is possible?: So, for instance, a client fills out the form which includes a drop down menu where they select one of 20 people they'd like to speak with. When they submit form, it is received by both my company email and the email of the person they selected.

Yes, this is possible by creating an autoresponder email for your form.
Basically the purpose of the email autoresponder is to send an email to the person who submitted the form. With a use of a dropdown field, you can do something similar. But if what you have on your dropdown selections are names instead of email addresses, you can create a condition where a relative email address shall be used to receive an email in relation to the selected value in the dropdown.
