I am new to JotForm and have already created a form for data collection. However, I would like to see if I can create a form for regular use throughout a real estate transaction. I do not collect all of the data at once, though. Is there a way to collect some of the data at one time, save it on the form, and then enter other data on the form at a later time - without losing the data I already created? An on-going “transaction record” of sorts.

Yes, it's possible to allow the users to enter information and continue later on to complete the submission, there are two methods, please check them on the following links:

You may also allow them to submit the form and allow them to edit it on a later date, this guide will help you doing so: https://www.jotform.com/help/40-How-to-Let-Users-Update-Their-Form-Submissions-at-a-Later-Date
