Hi !
I am wondering if I can have form fields sending information to Stripe, such as the duration or start date for a subscription.

You can pass a custom value to Stripe. You need to follow these steps:
1) You need to connect your Stripe account with JotForm.
2) Click on "Additional Gateway Settings".
3) You need to select the field name in the "Custom Data Field" dropdown.
Please note that custom data can be collected only from a short text entry field.
Also, please note that custom data is available to only sell products, sell subscriptions, user defined amount and collect donations.

date of a Stripe subscription, though. Is there any way to do that ?

You can set the start date with "Set Trial Period" button. It means the customers will be charged end of the trial. However, you cannot set the end date.
