so if I have 5 forms I want to use, but I’ll have 200 people filling them out, can I still do the free option?  I store them? I don’t have to store on your site?

Unfortunately, for Free Plan, you could only have a limit of 100 Submissions. But yes, you can use all the five forms. Even you have your own storage for your submissions it will be counted on your form limits.
