3- If I customize the PDF automatically created "New Document 1" can I hide/delete some information without hiding/deleting them in the form ? (for example some text information that should only appears to the user with some conditions), because that makes my PDF document very long, but I only need in it some information

You can customize the PDF Document. Edits made on PDF Documents will not be visible on your live form.

in fact everytime I tried, the field I deleted in the PDF editor document (that I reached from the advanced option of the notification email) disappeared also in the main form...

You should be able to delete the fields in the PDF document without consequence. This should not reflect the online form. Please make sure that you edit the PDF document, not a PDF form.

If you try to delete fields from the PDF form, you will get the following:

Are you sure you want to delete this field? If you delete this field, you will lose the associated data. It will also be deleted from your web form.

So, if you click on "Yes", it will delete also the field on the online form.

However, after you edit the PDF document and when you open the PDF editor, you might get the following message: "It seems that you have updated your form. Do you want these updates to be applied to your document? Please note that these changes may affect your current design.", please make sure that you click on cancel. Otherwise it will display the deleted fields of the PDF document again.

Let us know if you need any further assistance.

    I understand, thank you.

Now I have another problem. When I edit the notification email of one form named "Réservation sans arrhes" here https://eu.jotform.com/build/73334694384364/settings/emails

the Default Document as PDF attachment is a PDF Document named "Bulletin d'adhésion" I made for another form named "Swami Atmananda" (https://eu.jotform.com/pdf-editor/92803337901355)

How can I decide which PDF document is my default Document for all my forms ? It's interesting for me but I don't know how to define it (I use also my personal template but I would like also to define my own Default Document for notification attachment)

    Thank you

Your "Réservation sans arrhes" form does not have a PDF Document.

Please note that you need to create a PDF Document in each of your forms. Once you create a PDF Document and enable PDF Attachment inside of the Email Notification the PDF report you select inside of the Notification will be attache to the Email Notification of that form.

If you want that PDF Documents of all forms looks the same, then you can create a template and apply it to all created PDF Documents.
