I have conducted several tests on how to set the date's format to be displayed in full numeric when viewing inside the INBOX, however, I can see no option to do that. The dates are being presented in alphanumeric instead.
A workaround for that is to add a SHORT TEXT ENTRY field that will copy the DATE PICKER's value. That can be achieved using conditions.
For example, we will add a field that will copy the BIRTHDATE fields value when it is filled by the user:
Here's a condition that we can use. It will automatically copy the DATE field's value to the Text field:
And of course, we should only display one BIRTHDATE field, right? So let's add another condition that will hide and show each field when the other is filled:
Now, here's what it looks in the INBOX:
Please try that and let us know how it goes.

Upon trying this solution, if the date is manually entered into the first field, it is hidden before the user has a chance to finish typing. It only seems to work when I have the "lite mode' on. However, I get error message that flashes saying there are errors on the form when I submit

I believe you are referring to this form: "92958209055162".
I could not see any error while submitting the form.
The error that you received could be due to the fact that you may not have filled any required field.
Also, when I cloned your form and disabled the Lite mode, the field is working as before. If you are seeing otherwise, please provide us a screenshot of how it is showing at your end.
Please test and let us know if you are still receiving any error.
