Change the data sent for the Terms&Conditions widget in email notifications

Their second query is this - "On the form we receive by email, where they agree to our T&C’s, it say’s contact preferences. Can this be changed to say T&C’s in the left column and ‘agreed’ in the right?"

In the widget settings of the Terms&Conditions widget, you can change the Accepted Text to "Agreed".

It will automatically change the value that appears on the right column of the data table in the email notification.

As for the label on the left column, you can change that manually by editing the email template.
