Okay, so I want to know if something is possible

I want to create two seperate docs- one is a form and another one is a contract that needs to be signed, one person needs to fill up the form and sign the contract seperately, so when they fill up the form we can see it in the admin panel, is it possible that when they will sign the contract online, there will be one column in the same excel sheet that tells whether they signed the contract if signed, when they did it. 

Is it possible to make that functionalities, the contract signing we are doing it through docusign now, I guess it can be integrated or if there is any seperate contract signing option for jotform? 

You may add a signature field in your form in which your users may sign.

You can then set the date picker field to default date so that it will get the date when the form is submitted.

Actually I want to know if I can add a have contract which needs signature can I populate the information in the excel sheet in the admin end? 

We have a DocuSign widget that will allow your users to sign in a PDF document, but this document will be stored on your DocuSign account only, I'm afraid that it's not possible to keep the link to this file.
