How do I get all the signed forms to specific person?

Im looking for a way of circulating a group letter for lots of people to sign, that would then be emailed to a certain person. A bit like a petition, but I don't want it to seem like a petition. How do I get all the signed forms to that person? Would I put their email instead of mine?
