How do I get report builder to add up the dollar value of items?>It adds up the items but not the amount of the items.

As far as I can see the reports builder can only show the total of each item/product selected and not all products:

To achieve that it is directly not possible to use the payment field - Purchase order or product list field.

You will need to add the products outside the payment field using Inventory widgets - one widget for each product.

Then you can use a Form calculation widget to get the total quantity of products - you can add all inventory widgets into the Form calculation widget to get the total quantity: https://www.jotform.com/help/259-how-to-perform-form-calculation-using-a-widget
