I am creating a petition form, and I want a general message to be included in the email that the recipients receive. I tried entering text and a read only text box but it doesn't work. The text disappears on the submission email, and the text box empties after I check "read only" in its properties. I appreciate any help you can offer!

Unfortunately the TEXT field(found in Form Tools) when used on the form, will NOT be available in the e-mail notification message body.
What you can do is to manually add the texts/message in the e-mail template body.

I believe it was similar to what you need.
