If you're using Jotform's default sender emails e.g. firstname.lastname@example.org and email@example.com, the answer is no. They are sent unencrypted. If that's one of your major concern, then use your own SMTP to send secure emails instead. I believe this is done by setting SSL/TLS on your SMTP configuration to enable encryption for emails.
