I am trying to create a "test" form where a user could answer a few fields and decide to continue later... Once the user hits the "Continue later" Submission button the provided Edit Submission Link would only allow him to get back to the form and complete empty fields without being able to modify previous entries. Is there any work around for such use?

Unfortunately there is not currently a way to limit which fields users are allowed to edit when editing their submissions. Here is a discussion of a possible work around, but you would need to manually edit each submission to fill in a hidden field that in turn, hides all of the fields you do not wish to be edited.
