Our customers are receiving a confirmation email that is alarming because it has characters that don't really make sense for our purposes. Is there anyway to disable or edit the email confirmation they receive for their payment or their "order" in this case?

There is an email Autoresponder configured on your form. You can delete the Autoresponder, or click on it in order to change the email template.
It is also possible to restore the email template to default format:
