I would like to customise the columns to show in a form answer page. I know I can show or hide them by right-clicking and tick/untick them, however this is just a temporary modification. How can I save my preferences for a particular form?

Were you referring to the form's View Submission page?
The View Submission page is not customizable. It is limited only to the available options it have.
If you need a custom viewer/report of the submission data, then I recommend using Reports instead.
How about using the HTML Table Report
user guide: -How-to-create-an-HTML-Table-Listing-Report
The columns selected can be fixed, and and cannot be customized by end-user.
