My form is working correctly but when someone fills out the form and I get a email notification, the email notification shows the form details that was entered AND also a pdf attachment of the same details. How can I stop the PDF attachment being included with the email notification?

It seems to me that you mean you are receiving a pdf of your submission as an attachment that is included in your email notification.
To disable this simply edit your email notification then go into the recipient and sender settings and make sure the Attach PDF box is unticked.
