We do not have any built-in option to accept form submissions by email.
However, this is possible to add form entries via API. Such API submissions are different from normal submissions, they do not send any emails and do not trigger integrations (if any on form). If you are okay with such limitations, in theory, it should be possible to process email data and then submit it using JotForm API.

Is there a way to convert incoming email to a HTTP POST request?
To illustrate this via Zapier: Process email -> Submit data as POST request to JotForm. Although, this have not been tested.
