We have a couple of captchas in our form builder, we have the default one under the Quick Tools section and we also have some widget versions. Here's a guide about our captcha: https://www.jotform.com/help/205-How-to-Add-a-Captcha-Field

Unfortunately, if you are using the default captcha, it is not possible to change the error message when an incorrect captcha is added. When an incorrect captcha is entered, the user is redirected to this page:

If an incorrect captcha is again submitted, it will show the same page again.

If you want to change the form warning messages, the ones showing in red pop-up messages, then that is possible. You can check this guide for that: https://www.jotform.com/help/61-How-to-Change-Form-Warnings

Let us know if that helps.
