When someone completes and sends us a booking or inquiry via our jotform, is it possible to build a database of these email addresses so we can use for sending occasional news/blogs on our company

All data is captured and can be viewed from the submission page.
You may export all or certain data in excel, PDF or CSV format.
How to Export Form Data to Excel
Once you have the data exported you may send the news/blogs manually to any users you would like.
If you would like all the users to receive news letters, you may also integrate Mailchimp into your form so all of them will receive them
