We have imbedded a customer satisfaction survey into our IT Helpdesk.
As responses only come in occasionally, we would like to receive an email, whenever a response is submitted.
How can that be integrated?

I am glad to know that you found your answer yourself.
Yes you need to add a notification email alert in your form. The following guide should help you how to add email alerts in form: https://www.jotform.com/help/25-Setting-Up-Email-Notifications
If you want to change the email address on which you receive submission emails, you will have to edit your form's notification email alert and change the "Recipient Email" address. The following guide should help you: https://www.jotform.com/help/41-How-to-Find-and-Change-the-Email-Address-Used-for-Notification-Email
