I'm a teacher and the yearbook editor for a High School in Canada and we like to use jot forms for yearbook photo submissions.  The issue is we are not allowed to have any student personal information stored outside of Canada.  If I integrate my google drive (The servers for Canadian schools are in Canada) will all submitted data be stored only there?  Will that be the only spot for uploaded pictures/files?  Thanks for your help.

Yes, if you integrate your form with Google Drive the data will be sent to your Drive folder in a PDF report and all attached files will be sent to that folder as well.

You will be able to download and review the data as well as use the filed submitted in your form.

If you do not have allowed to store data in any other place, then here is an app that will help you to automatically delete the submitted info instead of doing it manually: https://apps.jotform.com/app/auto_delete_submissions
