How can I set-up my forms so that only my client receives the forms and not send a copy to me with each form submission.

The email notification is the email alert that you receive when someone completed your form. You just have to delete the notification in your form and leave the auto-responder in the email wizard. Here's a guide:
1. Click the "Emails" button in the toolbar.
2. Select the Notification and then click the "Delete" button.
