First off, do note that a payment integration can be used only with one payment type only, so you can only set up your payment field to sell products, subscriptions, collect user-defined amounts or donations, but you cannot choose more than one payment type at the same time, other thing is that you cannot add more than one payment integration to your form so will not be possible to add one integration to sell products and other one to collect donations.
In order to get more details about how to set up the products in your form I would suggest you to take a look on this guide: Setting-Up-Your-First-Order-Form
Now, you can set up different prices to your products and I think there is a way to set up a product to work as a donation.
With the guide above you will know how to set products and set their prices, and now for the donation you could add one product and $1 (or in your currency) as price, then add a quantity option that will help to capture the amount to donate.
Since the quantity field will work as amount then the number entered in the quantity field will be shown as the donation amount.
