Change the "Shipping" label of product order detail in email alert

In addition and more important when the name of the Shipping charges is changed on the form it shows correctly, in the response email and auto-responder it still shows shipping charges.    

I presume you are referring to the shipping and tax labels shown in the email alerts, just like this one:

Unfortunately, their labels will be based on the actual attribute or their element. In this case, they are "Shipping" and "Tax" as displayed in the payment wizard: 

 

The labels displayed on the form will not reflect the same label in the email template: 

 

However, you can easily choose what information on the purchase order will be displayed in the email template, from there you can label them what you like to.
