Can we get a more advanced "Custom dates" option that integrates with google sheets (AND/OR other cloud database).
Example of workflow:
a jotform powered "estimate request form" -> google sheets integration -> response ->
job booked -> date and time no longer available ->
(some spreadsheet column) -> populate jotform Date Picker field -> Date Limits Option "Custom dates".

Personally, the flow you presented involves more then the "Date Picker" field's date limitionption. It involves Google Spreadsheet which is actually one way integration.
However, if you want to limit submission based on available dates, we have ways on how you can do that:
Method #1: Use the date picker field as the unique submission for date reservations. Here's a guide about it: https://www.jotform.com/help/223-How-to-set-Form-Limits-Based-on-a-Unique-Question. So let's say user picked "August 1, 2017" and submitted the form. No user can submit the form if he/she picks August 1, 2017.
Method #2: Use the Date Reservation widget. Here's a guide on how to add widgets in your form: https://www.jotform.com/help/252-How-to-Add-a-Widget-to-your-Form
Method #3: Use widgets that allows you to set available slots that dynamically changes. Below are some example of them:
