I've created a pretty basic form, but when users fill in the details and submit, the email that arrives does not match up with what was entered!
Some fields are repeated and others are just wrong/out of sync.
How can this happen and what do I need to do to fix it?

I am not sure if I understand your query correctly. Do you mean to say that the fields in the email notification are not displayed correctly? If so, could you try adding a new notification to the form so that the fields should be displayed correctly? Once you see that the new email notification is good, you may then delete the old notification from the form.
