Where Jotform saves the information?

where is the information stored? And is it secure? why can't I store the information locally?

It is stored in your submissions page https://www.jotform.com/help/269-How-to-View-Form-Submissions and yes, it is secured.

If you want to save it locally, you can export the submissions in excel or csv format. Please see this guide on how to https://www.jotform.com/help/44-How-to-Export-Form-Data-to-Excel.
