give permission so google can have access to all of my account info. That
info is very sensitive. Do i have to give Google permission in order to use
that feature for payments?

No, Google should not be showing when you integrate the form to Square payment. However, if you use google chrome as your browser then you're probably referring to this?
If yes, it shows as "Sign in - Google Chrome" because you're using chrome to log in to your Square account. (It is okay and safe)
