I had a 50 dollar payment not come through off of a form, but got a email stating payment went through. I believe someone changed the PAYPAL account on the form.

I deleted the form and am invoicing ppl via PayPal. I believe an ex employee changed the email address to their account.

You can restore the form https://www.jotform.com/help/134-How-to-Restore-Deleted-Forms and check the email address on the PayPal field. If it's not your email address, you'll need to contact the person who owns the email address. As you've mentioned that the your ex employee changed the email so I assume that the submission went into your ex employee's account.
