Cannot find where I can change the settings for code to enable full screen?
The form is not taking up the full width of the mobile screen?
If i do that - will that annoy users on bigger screens?

I checked your form on my Android phone and it is already a mobile responsive. Can you please tell us what kind of fullscreen are you referring to?
Please try to inject this custom CSS code to your form:

Is the problem in the form displayed here (second image down) a local
problem or setting on the phone?
The landing page is fine but when we go into the event page the screen is
reduced significantly

Your form seems to be fine when I check it on my Android phone.
