If I decide to discontinue the payments option, will it erase everything I have done?

I did check your account and found that you have exceeded the allowed payment limit of free account. Please note that your account is set to downgrade to free plan on Nov 23, 2020. Once your account is downgraded, all your payment forms will be disabled and your users will not be able to submit payment forms.
If you do not upgrade your account, your payment forms will continue to be disabled but none of your submission data will be disabled. Your forms will be enabled again automatically on the first day of next month when the submission limits are reset.

If you mean you would like to remove the payment integrations on your form, you can do that by just deleting only the payment field.
Then add a PRODUCT LIST or PURCHASE ORDER field:
These fields allow you from creating an order form without requiring payments from your users.
Also, when you delete the existing payment field of the form, the products you created in it will be carried over to the new payment field that you'll add such as Product List or Purchase Order, so you won't be creating them again from scratch.
But please note that removing payment integrations on your form will not lift the OVERLIMIT status. You may either wait until December 1st for the limit to reset or just upgrade to a paid plan to re-enable the forms immediately.

If you remove the existing payment field, the products will be carried over to the new payment field that you'll add (e.g. Product List or Purchase Order), so it's no longer necessary to re-create them.
Also, please be aware that deleting the payment field will also remove the data associated with it. So If you still need the data, I would suggest downloading them first before you delete it. Here's a guide on how-to-download-form-submissions-as-excel-csv-pdf.

AS checked, you already reached the Payment submission limit for this month. For FREE accounts, you can only accept up to 10 payments, but it seems you received 11 which is beyond the said limit. You may wait for it to reset on Dec 1st or you can upgrade to a paid plan to increase the limit.

I understand that you already removed the payment integration and used the Product list field instead. However, the previous payments were already counted. Removing the payment fields will not lift the over-limit status as payments have been done already in the account. You need to wait for the said limit to reset on December 1st in case you would not want to upgrade.

You are free to do so. Using this field to accept orders will not be taken against the Payment submission limit. This applies to your next month's transactions.
