I did check your form's notification email template and found that the field name for "I'm Interested in:" question.
Please be noted that if edit your email alert template, it becomes dirty. That mean any changes you make in your form will not be reflected in your email alert. You will have to manually update it in your email template.
The best way to solve this problem is to delete the existing email alert and add a new one. A new email alert will always add all the questions with correct field name. The following guide should help you:

I have anyway gone ahead and updated your form's email alert and fixed this issue. I would suggest you to please test your form and get back to us if the issue persists.
