How can I see easily how many purchased have used each coupon code?

There a a couple of ways on how to check the number of coupon codes used.

First, you can see them in your form's submissions page. Here's a guide for that: https://www.jotform.com/help/269-How-to-View-Form-Submissions. You can easily filter the data my simply using the search bar.

You can also download your submissions as an excel file, from there, you can filter, sort or analyze the data per coupon code.

You can also take advantage of the Google Spreadsheet integration that we have, that allows you to have a real-time list of your submissions in an online spreadsheet, you can the create charts or formula that will sort your coupon codes for data analysis.
