I've set up a form for our clients to fill in. I would like to populate a PDF or Word document with elements from the form and have it emailed to the client when they hit the submit button. Can this be accomplished with JotForm (automatically)?

Yes, it's possible to send a PDF copy of the submitted data to the submitter, you may even customize the PDF report if you would like to, the guides below will help you doing so:

Is there any way to upload a PDF from Adobe to "Submissions" or "Reports" ?

Do you mean you have submissions PDF from Adobe and you want to upload it here in JotForm?
If you can convert the submissions PDF from Adobe to Excel, you can use the guide below to pull existing records and display them on your form:
