In terms of editing the css is this something I can do in jotform? Is there something like a CSS form creator?

If you want to add custom CSS code to your form, please follow this guide: https://www.jotform.com/help/117-How-to-Inject-Custom-CSS-Codes

The videos look great - however my screen doesn't show me CSS.

Apologies for the confusion. We have two form types, Classic Forms and Card Forms. You are currently using Card Forms, meanwhile adding Custom CSS is only available in Classic Forms.
I believe you are asking for custom CSS due to this:

You do not actually need to sell products, you may also set Payment Type = User Defined Amount, then to avoid confusion to your users, you can include a description that states the final amount is subject for recomputation.
