How can I allow mulitple selections on the listbox?

It only allows to purchase one card, and some people want multiple cards. It's not allowing that.

Also, if a card is picked I would like that card not to be available. How can I do that?

You may select multiple items on the list box by holding Ctrl key and then select the required items. Unfortunately, the selected items will be available again when the form is loaded. If you want to disable the selected option for the further submissions, you may consider using one of the widgets below by setting the limit 1 for each entry.
