We want to redirect people to a different payment option than what we started out with, but some people have already paid via PayPal, so we need to keep that information. I was planning to "Hide" the field, but that is not an option. I believe deleting that field will delete our received data, but is that correct? What are my options?

Unfortunately if you are looking for ways to not remove the data from your submissions page with the field deleted, this will not be possible. What you can do here is download the CSV and/or the Excel data of your submissions. This way, you get a back-up of your data on your computer.
