We have a ton of apps that require our security token and I don't want to reset the security token to get a new one as it will take weeks to rebuild everything and bugfix.
Is there another way of connecting Salesforce to Jotfom?

As far as I understand, the new token is not a requirement, it should be possible to use a current security token in our integration.
If I am missing something, please let me know.
