Is it possible to create a form where a user can start filling it out, save the work and go back to it later without losing what has already been filled out? TIA!

Yes, there are two methods:

1) If you apply this method, the user will need to get back to continue filling the form from the same browser, because the data is saved in the browsers local storage: https://www.jotform.com/help/227-How-to-Enable-Auto-Fill-on-Forms 

2) You can apply this second method which generate a session URL, so the user can complete it from anywhere through any device and browser: https://www.jotform.com/help/97-How-to-Save-Forms-and-Continue-Later
