Is it possible to add a coupon code like with products?

Yes it is possible to add Coupon Codes to your payment form.

If you use the "user defined amount" in your payment integration then it is not possible to use its coupons. Coupons are only available for products and subscriptions.
As a work around you could create your own coupon mechanism.
To do that you would need to add an input field that takes an alphanumeric code and has a condition to see if the code is correct. If it is then you could set a calculation to perform a discount on the total.
