Can I switch Purchase order to another payment field in the form?

 Can I take a "purchase order" that I previously used and turn it into an actual "Order Form" with payment options?

Yes, you can, you can remove the Purchase order from your form and add another payment field, what is good, the products you created will remain when you add another payment field.
