How can I change my payment gateway on an existing form?

We currently have Eway stored on a form as the payment gateway however I would like to change this to Stripe. 

Please let me know how I can do this without deleting the information.

If you delete the payment integration from your form and re-insert the payment field (even some other one), the information will remain. Products will not be deleted, you just have to input the login information for the new payment you need.
