For our registration process, we have 5 buildings in our district. Can we use one form and then sort the data when it comes in by building? Or should we have a separate form for each building so that the data is separated?

Yes, you can use just a single form. All you need is the link to the form which should be visited using a browser and then let registration area for each building use the same link.
