Under 'View Submission' we see the data collected via the forms, stored. How do we set it up / configure so that the data is not stored in Jotform?

You can do this with the Auto Delete Submissions app, here is the link: https://apps.jotform.com/app/auto_delete_submissions

You need to first authenticate your account and then select the forms you want to delete the submissions automatically from.
